Hi Mark, I cannot answer your question on the inlay as I haven't tried any yet.  It's on the "someday" list but haven't gotten there.  However, there are several here that do it a lot and hopefully they will see your post and provide some answers.  I know that @Jim Finn does as well as @Sycamore67 and @John B and they have shown some beautiful pieces in the past.  I know there are others, but these 3 came to mind so I have tagged them so hopefully they will see and respond to your post the next time they are on.

I can not tell you an angle.  As for the thickness of the inlay piece that two depends upon a few things.
If you are only going to show one side of the item then the inlay does not have to reach right through the piece and can even be proud on the face, (You can sand it flush once it is glued up).
As for the angle, this is the way I do it. I grab a couple pieces about the same thickness of the project and the inlay and fix the inlay sample on top. Then set the saw at an angle and cut a "Keyhole" shaped piece out of it and see how far the inlay sits into the project piece, Adjust until I'm happy and then cut the actual job out. The angle depends upon the size of the blade used and this depends upon the intricacies of the job, the type of timbers being cut and the thickness.
