New York produces some of the best maple syrup. But this year will be one of the lowest production years on record. The weather just did not cooperate. Good sap production to make the syrup requires cold nights and warm days. This year, the warm days came too late. Anyway, get your pancakes with maple syrup now, eat'em hot off the griddle.
