I am the same - to me, the cutting the patterns out and getting the "fit" is the part I sweat the most about.  Sanding, you just do a little at a time until you are happy with it. :)

I refer to the "cutting portion " as not only the cutting but wood selection and laying out the pattern on the wood for color & grain. That process can either make or break a piece of intarsia. Pick the wrong wood and it may end up too light or too dark and you may not notice it till you are applying the finishes. Laying out the pattern on the wood - you are always looking for that specific grain pattern that could also make or break the piece. I always figure that will take about twice as long as shaping. Raising and lower for depth is quick and easy by adding shims or thinning down the wood. 

In the work in process section - follow the shaping section and i will show how easy that is once you have built the depth into the peice
