I will smoke this bird tomorrow.....gal of apple cider, gal of water, 2 lemons, 2 oranges, 8 cloves of smashed garlic, 1cup of coarse kosher salt, 1 cup of dark brown sugar , 1Tb of red pepper flakes.... dansnow Posted November 27, 2019 Report Posted November 27, 2019 I've tried brining the bird a couple of times, but it does something to the texture of the meat, giving it a different mouth feel. The next one I smoke will be without brining to see how that works. smitty0312 1 Quote
