I gave this a try this past weekend. Turned out great. Mine were a little thicker, maybe 1/2 inch, and I flipped them after 10 minutes. Once I flipped them I added diced onion, bacon and topped with shredded sharp and pepper jack cheese. After 10 more minutes the cheese had melted and I plated them adding salt, pepper and a dollop of sour cream. Huge hit. Thanks so much for the idea.
