Northern folks often don’t know what they are either. Lots of people don’t care for them, mostly because they’ve never had them prepared well. It’s actually dried corn with the hull removed and then ground to small pebble like “grits.” You boil them like oatmeal. My granddaughter is a big fan of mine.
