Very nice work, I am dog guy, but I also think the darker wood looks better.

And the two so very different shades of the same wood, made me wonder, so after some research and I found this to answer my question

The dry heartwood is a light to medium red-brown colour. The sapwood is light brown to white and exhibits toning in greys, browns and greens.

Thanks Jim.  I think some of the difference is caused by my phone camera and the different colour backgrounds.  Here is another picture of the cats where the colour is much closer although it does have some streaking so you are probably right that that one is sapwood.
