Big Sur is the first version for Apples new Macs that will no long have an Intel processor but an ARM type designed and fabricated by Apple.  Big Sur does have a backwards   compatible component that is meant run apps expecting an Intel processor.  I have an Intel based MacBook Pro with Big Sur installed and all my important apps run without problems but there are a couple others that are a little flakey.  The computer itself does not seem to have a problem with this OS.  Apple is shipping 3 of their product line with this new ARM processor and I have not heard of any real issues. I have no immediate plans to switch to this new processor as my current MAcBook is working.  By the way there have been some updates to Big Sur - current one is 11.2.3 and I suggest updating to it.

My old Dell with Windows 7 works perfectly fine. I won't change ( kicking and screaming) until I'm forced too. That's the way it's been with me for the  last 30 or so years.  I was perfectly happy with my first MS-DOS computer,

I'd keep an eye on Inkscape.  They're not the type of group to let incompatibility last for long.

Check on the Mac store and search for "Vector Graphics" and see what pops up.  Other alternatives are Corel Draw and Adobe Illustrator.  All of these options will cost money and probably will have a steeper learning curve since they tend to be used in a professional setting and needs a ton of flexibility.  But YouTube is a great place to learn....and you might like it better.
