For every intarsia piece I have made, I glue everything together and then apply the finish.
It seems less time consuming and the finish isn't necessary where it won't show.
That, of course, is just a matter of my opinion.
Great looking project! I am also eager to see you entire set.

Well done with excellent wood choices.  The shaping is very good and brings a lifelike quality to it.

I would glue first and the use either a gel type finish or wipe on finished.  You will likely need to use small cotton swabs or tooth picks to finish in small areas.
